
Wine of the Week: Billecart-Salmon Le Blanc de Blancs
Billecart-Salmon's Le Blanc de Blancs is a masterclass in quiet confidence.

There is a temptation, particularly in Champagne, to equate prestige with extravagance. The tallest bottles, the loudest labels and the rarest cuvées often dominate the conversation. Yet some of the region's finest wines have built their reputations in a rather different way, relying instead on consistency, restraint and an uncompromising pursuit of excellence. Few houses embody that philosophy quite like Billecart-Salmon.
In today's Champagne landscape, independence has become something of a luxury in itself. Many of the region's most recognisable names now sit within vast global groups, making Billecart-Salmon something of a rarity. More than two centuries after Nicolas François Billecart and Elisabeth Salmon founded the house in 1818, it remains in family hands, with seven generations having protected its philosophy of patience, precision and uncompromising quality. That continuity brings something increasingly difficult to replicate: the freedom to think in generations rather than quarters, allowing time, not market pressures, to shape every bottle.

Made exclusively from Chardonnay grown in the celebrated Grand Cru villages of Avize, Chouilly, Cramant and Le Mesnil-sur-Oger, Le Blanc de Blancs is a Champagne that captures the grape at its most expressive. Rather than chasing richness, it leans into elegance, allowing meticulous winemaking and extended ageing to create a wine of remarkable purity and precision.

We don't often recommend bottles we haven't lived with ourselves. Last Friday, at Gentleman's Journal's Long Summer Lunch, The were a few bottles of Le Blanc de Blancs. The wine accompanied one of those rare afternoons where nobody seemed in any hurry to leave. As glasses were topped up between courses and conversation drifted long into the afternoon, it did exactly what great Champagne should: never demanding the spotlight, simply elevating the occasion with effortless elegance.
The first sip is Wonderfull. Bright citrus brings an immediate sense of freshness before softer layers of roasted almond and warm pastry begin to emerge. Beneath it all lies a distinctive mineral character that gives the wine shape and energy, carrying through to a finish that feels impossibly clean and effortlessly long.

Everyone has their favourite Champagne pairing, and mine has always been oysters. Recently, while in Salcombe, I enjoyed a bottle of Le Blanc de Blancs alongside a platter of freshly shucked local oysters overlooking the harbour. The wine's precision, freshness and gentle mineral character made it one of those pairings that simply felt effortless. While it would also sit beautifully alongside caviar, sashimi or delicate seafood, it's with oysters that this Champagne truly comes into its own. The house also recommends serving it with Osciètre caviar and finely prepared raw fish dishes.
Perhaps that is what makes this bottle so appealing. It doesn't ask to be reserved solely for life's biggest celebrations. Instead, it elevates the occasions that matter most: a lingering lunch with friends, the first warm evening of summer or a quiet Sunday when opening something special simply feels like the right thing to do.
