Cocktail of the Week: The Solera Slipper

With lemon and chestnut, this is scotch as you've never tasted it before...

Glenfiddich have been in the whisky business since 1886. But, in all that time, they have never attempted such an ambitious pairing menu as the one currently on offer at STK London.

Including everything from lobster to Eccles cakes, prime beef fillet to beer caramel, the five course menu has been crafted meticulously so each dish perfectly pairs with one of the whiskymaker’s celebrated spirits.

And the crowning glory of this eating experience is the Solera Slipper – a smooth and refreshingly fruity cocktail showing that, even 130 years on, Glenfiddich are still finding new ways to bring whisky to the masses.

To recreate this cocktail at home, you will need some peculiar ingredients – chief amongst them chestnut liqueur.

Take a shaker, fill it with ice and add two measures of Glenfiddich – we’d suggest the 15 year. Next, pour in around 20ml of chestnut liqueur and the same amount of freshly squeezed lemon juice. Stir in a teaspoon of honey and two drops of Angostura bitters, and then shake for around 20 seconds.

Strain into a chilled coupe and garnish with a sprig of thyme. If you want to lighten the style of this cocktail even further, use lemon thyme – and if you’re looking to pair it with food, why not try some rich foie gras?
