Cocktail of the week – the tom and sherry
Words: Violet

This week’s cocktail was created by executive chef Garry Hollihead at the Northall Bar at Corinthia Hotel London, in order to celebrate the British tomato season which is at its best during August. The Tom and Sherry is a new take on the classic Bloody Mary with the addition of Sherry and finished with a stick of bacon. It’s smooth and spicy, a perfect combination of sweet and savoury, great for the morning after. The stunning Northall Bar has a luxurious vibe and boasts a spectacular cocktail and food menu and is a great place to get away from the usual city spots.
Muddle fresh celery, celery salt, sliced lemon, salt, pepper, lemon juice, Tabasco and Worcester Sauce and add tomato juice to make the tomato base mix.
Add 50ml Vodka, 25ml Sherry and 10ml lemon juice,
Fill a cocktail shaker with ice and pour in all the spirits and top up with the tomato mix,
Shake well and pour into a glass,
Garnish with celery and bacon sticks.
The Tom & Sherry is available throughout August corinthia.com/london
